Local treats – figs, cheese and rum – What a treat! Figs and goat cheese have always have been one of my favourite starters, but I have adapted my original recipe and used some local treats.

The original recipe is with goat cheese and a port and honey sauce. Delicious, but the recipe below of figs, Cambridge Blue and adding a splash of Old Salt rum is even better! It’s so good that you want to lick your plate clean to enjoy every drizzle of the sauce!

Recipe – ingredients for 2

  • 2 figs
  • 2 rashers of Parma ham
  • 75 gr of Cambridge Blue
  • 150 ml of red port
  • 2 teaspoons of chopped dark chocolate
  • 2 teaspoons of Old Salt Rum from the English Spirit company

HOW TO MAKE IT?

Start by taking the stalks off and cut across at the top of the fig. Don’t cut it down to the bottom, as the fig will collapse. Put the figs on a baking tray. Then, cut the cheese up into 6 pieces, stuff the figs, and wrap the Parma ham around it. Pop them in the oven at 180 C until the parma ham starts crisping up. Take them out of the oven and put them on a plate.

Whilst the figs are in the oven, you can make your sauce ( or make it the day beforehand if you have a dinner party). Put all the ingredients in a saucepan and reduce until it thickens. Swirl it around the fig and enjoy!
